Strawberry crumble Bars | Strawberry crumb Bars

Today's Menu is Strawberry Crumb/ Crumble Bars . This fresh strawberry crumble Bar is made with buttery shortbread base, layer with fresh strawberry and covered with crumbly ,buttery streusel topping..
     This strawberry crumble Bar goes best with a cup of coffee or tea or ice cream as a summer dessert.

Ingredients----
------------------

For Base and Topping :-
-----------------------------------

All purpose flour/ Maida - 1 1/2 cup

Sugar - 3/4 cup

Baking powder- 1 tsp

Salt - 1/4 tsp

Butter- 1/2 cup  ,cold & cubed

Egg - 1


For Filling :--
-----------------

Fresh Strawberry-  1 cup ,chopped 

Sugar - 2 tbsp

Cornflour- 1 tbsp




Method :----
-------------

Preheat your oven on 180 c for 15 minutes. 

Arrange sqare baking pan with butter / parchment paper 

Take a bowl add flour ,sugar ,baking powder and salt .. Mix well

Then add cold and cubed butter and egg..Mix well everything with your hand till get a crumbly texture...

Now put half of the crumble into the baking pan..press little to make crumb base ..

Now chopped strawberries. Add sugar and cornflour ...Mix well everything..

Then spread this strawberry over the crumble base...

Then covered strawberries with half of the crumble

Now  put the strawberry crumb into the preheated oven on 180c for 40 - 45 minutes..

Note ---  I like little more brown crumble cover so after baking I grill it for extra 3 minutes..it's absolutely your choice.

Cranberry Tea Cake

Cranberry tea cake is a perfect for Christmas winter holidays...This cake is perfect for breakfast with a cup tea and definitely serve with kids milk..Actually this easy to make moist and yummy cranberry tea cake can serve any time of the day or whenever you like to have...

Cook Time - 45 minutes 
Serve - 5

Ingredients:---

Refine flour or Maida- 1 1/2 cup

Baking powder- 1 tsp

Baking soda- 1/4 tsp

Powder sugar  - 1 cup

Soft Butter - 3 tbsp

White oil - 3 tbsp

Cranberry- 1/2 cup , fresh or dry 

Egg - 2 

Vanilla essence- 1 tsp

Milk - 1/3 cup 




Method  :----
-------------

Pre heat oven on 180 c for 10 minutes. 

Prepare cake loaf tin with parchment or butter paper  .Brush cake tin with little oil..

Now take a mixing bowl,add soft butter and sugar ..whisk till fluffy..

Then add eggs (once at a time) ,and whisk well..
      Then add oil and vanilla essence and whish till creamy and smooth..

Then add dry ingredients flour,baking powder and baking soda (pass through the sieve).

Mix dry ingredients with wet ingredients with spatula..

Add milk as required for making a semi thick batter .

Now add cranberry and mix well with batter..

Now pour this cake batter into the prepare cake tin.

Tap gently filled cake tin twice on kitchen table to realease air bubbles..

Now put the cake tin into the pre heated  oven. Bake it on 180 c for 40 - 45 minutes..

After 40 minutes insert a toothpick or knife into the cake tin,if it comes out clean means its done or if not then bake it for few more mints...

Christmas fruit cake (Alchol free)

Bake this festive Alchol free Christmas  fruit cake in advance of Christmas and feed it regularly with my sugarless black tea ..Mix dry fruits,nuts with caramel syrup and orange juice ..I have here soaked my all fruits to caramel syrup and orange juice to make this Christmas cake alcohol less..

Ingredients:----
--------------
Date - 1/4 cup

Golden Raisin - 1/4 cup

Black Raisin - 1/4 cup

Tutti fruti - 1/4 cup

Cherries- 1/4 cup

Almond- 2 tbsp

Cashew nuts - 2 tbsp

Walnut - 2 tbsp

Caramel syrup- 1 cup

Orange juice - 3/4 cup

Cinnamon powder  - 1/4 tsp

Nutmeg powder-  pinch off

All spice - 1/4 tsp

Refine flour or Maida- 1 1/2 cup

Baking powder  - 1 tsp

Baking soda- 1/4 tsp

Salt - 1/4 tsp

Powder sugar- 1 cup

Butter - 6 tbsp

Egg -2 ( if u want to make eggless then                   use 1/2 cup condensed milk or                   1/2 curd)


Method  :----
---------

Heat a sauce pan with 1/2 cup sugar .stir continuously till sugar transfer to caramel..now turn down flame and carefully pour 1/2 cup hot water and stir continuously to make caramel syrup..

Boil caramel syrup for 2 minutes. Then add all dry fruits and mix well with caramel syrup..

Let it cool for 2 hrs .then add orange juice and mix well .

Soak dry fruits in caramel syrup and orange juice for 5-6 hrs..

Then strain fruits and reserve caramel syrup and orange juice mixture.

Coat all nuts with little flour..keep aside..

Now preheat oven on 180c for 12 
minutes..

Arrange cake tin with parchment paper or butter paper  and brush little oil or butter..

Now take a bowl add soft butter and powder sugar. Whisk till fluffy..


Then add eggs one by one and whisk till creamy.
Then add flour , baking powder ,baking soda , spice powder and salt (pass through the sieve )

Now mix wet ingredients with dry ingredients with spatula..

Now add soaked fruits along with reserve caramel syrup and orange juice..
Mix well to make semi thick batter..
Now add flour coated chopped nuts and mix well..
Now pour the cake batter into the cake tin..tap twice. 

And bake it for 55 minutes- 1 hr or till a toothpick or knife comes out clean..



After 50 minutes (because every oven is different) insert a toothpick or knife into the cake if it comes out clean means its done or if not then bake it for few more minutes..

Brownie Butter cake

Two in one Brownie Butter cake is one of the most eye catching,moist and delicious cake i ever had...You will get in one platform a chewy chocolaty Brownie and super delicious buttery cake..





Cook Time - 45 minutes 
Serve - 5

Ingredients:----

For Butter cake 

Refine flour - 1 cup

Baking powder    1/2 tsp

Soft butter - 1/3 cup

Powder sugar- 1/2 cup

Egg - 2

Vanilla essence- 1/2 tsp

For Brownie 

Dark chocolate- 1 cup , chopped

Soft butter - 1/4 cup

Granuled sugar - 1/4 cup

Egg - 1

Flour  - 1/4 cup..


Method  :----

Pre heat oven on 200 c for 10 minutes .

Then prepare cake loaf tin with butter paper or foil.

Take a Microsave bowl ,add chopped dark chocolate and butter and microwave it for 50 seconds or till melt..

Then stir melted chocolate and butter till combine 


Then add sugar and mix well ..now add egg and whisk well till well combined..


Then add flour ..mix well with spatula to make thik brownie batter..


Pour brownie batter into the cake tin..


Keep cake tin in the preheated oven and bake it on 180 c for 15 minutes..

Within this 15 minutes we need to make Butter cake batter

Now take a bowl add soft butter and sugar..whisk till fuffy .


Then add eggs one by one ..whisk till creamy.

Then add vanilla essence and mix well.




Now add flour and baking powder  (pass through the sieve)..



Now mix wet ingredients with dry  ingredients with spatula to make semi thick batter..


After 15 minutes take out brownie from oven..

Then immediately pour butter cake batter over the brownie..




Put it into the oven and bake it on 180 c for 40 - 45 minutes..


After 40 minutes insert a toothpick or knife into the cake if it comes out clean means its done, if not then bake it for few more minutes.

Eggless Spinach and Mozzarella Muffins ..

Muffins are always loved by all age groups. Definitely kids liked it more..
  Generally we are habituated to eat sweet muffins..
 But this time i tried spinach and Mozzarella savory Muffins ..Me and my little one was too curious to see the final product and believe me this savory Muffins was too yummy , tasty and healthy too..
   I have here used Mozzarella cheese but You can use any cheese of your choice..



Cook Time -- 30 -35 mintues
Serve - 5

Ingredients  -----

Refine flour - 1 cup

Blunch and chopped spinach - 1/2 cup

Mozzarella- 1/3 cup

Buttermilk or curd - 1/2 cup

Baking powder - 1 tsp

Baking soda - 1/4 tsp

Melted butter - 1/4 cup

Crushed / chopped Garlic - 1 tsp

Salt - 1 tsp ir as required

Black pepper  - 1 tsp




Step by step Method -----
---------------------------------

Preheat your oven on 200c for 10 minutes..

Take a bowl ,add melted butter and crushed garlic ..

Now add buttermilk or curd, salt to taste and black pepper..
  Whisk well till smooth..


Then add sifted flour ,baking powder and baking soda..
    Mix well with wet ingredients with spatula ..

Then add chopped spinach and Mozzarella cheese..Mix well with batter..



Now arrange all muffins molds with muffin paper.

Pour batter into all muffins mold 3/4 th....spread some cheese on top..

Now keep all muffins mold into the preheated oven..

Bake spinach and Mozzarella Muffins on 180 c  for 30-35 mintues..
    After 30 minutes insert a toothpick inside the muffins ,if it comes out clean means its done..if not then bake it for few more mints..
